Watch interference of two wave and how waves were bounced from the boundary.

That is cool!

I take it that if the wave was not polarised before that it would be after hitting the boundary. That would make an interesting animation, seeing how unpolarised waves interact! I suppose that there would be billions of possible outcomes depending upon the direction of vibrations at each point when the waves coincide. That is possible why we tend to only do things in polarised waves within our course at school.

When you talk about polarized/unpolaiized wave. You are talking about the sum of many wave.
The interference pattern could become very complex because there are many possiblity. (many different kind of wave added together)
